Description

The cottage cheese should be soft and not too fatty, around 5–9%. Use good quality margarine (I use 'Pishka'). Before baking, you can brush the roll with beaten egg or sugar syrup for a golden crust. The roll can be served warm with a scoop of ice cream. I really love this roll even cold the next day.

Ingredients

  • Margarine 10 oz
  • Semi-soft cream cheese 10 oz
  • Wheat Flour 3 cups
  • Sugar 1 cup
  • Ground Cinnamon 1 tablespoon
  • Apple 5 pieces

Step-by-Step Guide

Step 1

Mix the cottage cheese with softened margarine and gradually add sifted flour to knead the dough. It should be tender, elastic, and easily come off your hands. Roll into 4 balls, wrap in plastic wrap, and refrigerate for about 30–40 minutes so that it rolls out well.

Step 2

Peel the apples and cut them into small slices. You can add raisins to the filling along with the apples. I soak the raisins in Jägermeister liqueur beforehand, then dry them with a paper towel and place them inside with the apples.

Step 3

Sprinkle flour on the table and roll out the dough fairly thin. Arrange the apples, sprinkle sugar on top (don’t overdo it, the apples will become sweet while baking) and cinnamon, and roll it up. Line a baking sheet with parchment paper, and place the apple rolls on the sheet. Bake the apple rolls in an oven preheated to 170–355°F for 45–50 minutes.

Step 4

Let the roll cool slightly, then slice.
