  • Wheat Flour 2 tablespoons
  • Shrimp 20 oz
  • Passata Tomato Sauce 2 tablespoons
  • Fish Oil 0 qt
  • Brandy 2 tablespoons
  • Salt to taste
  • Cream 5 oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Separate the heads from the shrimp and clean 100 g of the total amount. Place the cleaned shrimp aside. Crush the remaining shrimp along with the heads in a mortar or blend them, adding 4 tablespoons of water.

Step 2

Heat the butter in a pot, add the flour, and cook for a few minutes, stirring, until the flour begins to darken. Add the shrimp puree and tomato sauce, then pour in the warm broth. Mix everything well and simmer on low heat, stirring, for 30 minutes — remember to skim off the foam.

Step 3

Strain the soup through a sieve into a clean pot, season with salt and pepper. Reheat and add the brandy, as well as the cleaned shrimp. Cook until the shrimp turn pink and are cooked through.

Step 4

Pour the cream into a soup tureen and slowly pour the hot soup into it. Serve immediately.
