Shrimp Salad with Parmesan Pancakes
Ingredients
- Grated Pecorino Pepato Cheese 10 oz
- Semolina 0 oz
- Mild Chili Spice 1 piece
- Olive Oil 5 fl oz
- Garlic 1 clove
- Champagne Vinegar 2 tablespoons
- Romaine lettuce 1 head
- Scallions 1 bunch
- King Prawns 10 oz
- Salt to taste
Step-by-Step Guide
Step 1
Place a skillet for baking pancakes over low heat. In the center of the skillet, sprinkle 1 tablespoon of grated Parmesan, half of the semolina, and leave for 30 seconds until the cheese starts to bubble. On top of the first layer, sprinkle another layer of Parmesan with semolina. The cheese should melt and become slightly golden.
Step 2
Remove the skillet from the heat. After a minute, when the cheese hardens, use a spatula to detach the cheese pancake and let it cool.
Step 3
Bake 10 pancakes in this manner.
Step 4
Prepare the salad dressing by whisking together the olive oil with minced garlic, vinegar, and chili pepper. Add chopped green onions. Season with salt.
Step 5
Combine the lettuce leaves with the cooked and peeled shrimp and dress the mixture. Place the resulting mixture on the pancakes.
