Shrimp Clafoutis with Mushrooms
Ingredients
- Wheat Flour 5 oz
- Farm fresh eggs 3 pieces
- Milk 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Activated Baking Soda a pinch
- Ground Nutmeg a pinch
- Shrimp 10 oz
- Fresh Mushrooms 5 oz
- Garlic 1 clove
- Parsley 4 stems
- Butter 0 oz
Step-by-Step Guide
Step 1
Sift the flour into a bowl and mix it with the baking soda. In another bowl, lightly beat the eggs, add the milk, and season with salt, pepper, and nutmeg. Pour this mixture into the flour while continuously whisking with a fork until a smooth liquid batter forms. Let the batter rest for 30 minutes.
Step 2
Peel the shrimp, make a cut along the back, and remove the intestines (the black vein) using the tip of a knife. Melt the butter in a pan, add the shrimp, and sauté, stirring, for no more than 3 minutes. Finely chop the garlic, add it to the shrimp, and sauté for another minute. The shrimp should turn pink. Add the chopped parsley to the shrimp.
Step 3
Wash the mushrooms, cut them into quarters (i.e., the pieces should be quite large), add them to the shrimp, and sauté for another 2 minutes.
Step 4
Grease a baking dish with butter and place the shrimp and mushrooms in it.
Step 5
Pour the batter over the shrimp and mushrooms. Bake at 430°F until a golden-brown crust forms. The clafoutis should puff up. Serve hot, garnished with sprigs of parsley.
