Shrimp and Squid Risotto
Ingredients
- Onion 1 piece
- Garlic 1 clove
- Butter 5 oz
- Dry White Wine 10 fl oz
- Fish Oil 15 fl oz
- Peeled Cooked Shrimp 5 oz
- Chicken Broth 15 fl oz
- Brandy 5 oz
- Squid 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Thyme to taste
- Grated Pecorino Pepato Cheese 0 oz
- Arborio rice 10 oz
Step-by-Step Guide
Step 1
Sauté the onion and garlic in butter.
Step 2
Add the rice, stirring until the rice becomes hot.
Step 3
Add the wine and stir until the wine evaporates.
Step 4
Add the first portion of hot broth mixture, stir, and wait for it to be absorbed. Continue this process, waiting for the rice to swell and absorb the liquid before adding the next portion of broth.
Step 5
While the rice is cooking, heat a pan, pour in some olive oil, and add the shrimp and squid pieces.
Step 6
Sauté the seafood lightly, then add 125 grams of brandy. Wait for the alcohol to evaporate.
Step 7
When the rice is soft and creamy but still has a slight firmness in the center of each grain, combine it with the prepared seafood, add grated Parmesan, salt, pepper, and thyme.
Step 8
Remove from heat, cover with a lid, and let it sit for about 5 minutes.
Step 9
Serve in warmed plates.
