Shrimp and Scallop Chowder

Ingredients

  • Fish Oil 0 qt
  • Lime 1 piece
  • Ginger 0 oz
  • Lemongrass 1 piece
  • Scallions 1 bunch
  • Chili jam 1 teaspoon
  • Tiger shrimp in brine 7 pieces
  • Scallops 10 pieces
  • Herbs 1 bunch
  • Salt to taste

Step-by-Step Guide

Step 1

Add lemongrass, lime leaf and zest, ginger, and chili puree to the fish stock.

Step 2

Bring to a boil and cook for 10–15 minutes.

Step 3

Chop the green onion and add it to the stock. Cook for 2 minutes.

Step 4

Slice the shrimp in half lengthwise, keeping the tail intact.

Step 5

Rinse the sea scallops.

Step 6

Add the scallops and shrimp to the stock. Cook for 1 minute. Season with salt.

Step 7

Garnish the soup with chopped herbs.
