Shortbread cookies with nectarines
Ingredients
- Nectarines 4 pieces
- Sugar 0 oz
- Meyer Lemon Juice 0 fl oz
- Wheat Flour 10 oz
- Baking Powder 0 fl oz
- Coarse Salt 0 oz
- Butter 5 oz
- Cream (40%) 10 fl oz
- Fine white sugar to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Pit the nectarines and cut them into small cubes. Transfer to a bowl. Add lemon juice and 2 teaspoons of sugar. Mix and let sit for 15 minutes.
Step 3
In another bowl, combine flour, baking powder, salt, and the remaining sugar. Then add the diced butter and mix until crumbly using your hands or a blender. Next, add the nectarines and mix well.
Step 4
Place the dough on a floured surface and roll it out into a circle 22 cm in diameter. From the circle, cut out 8 equal circles, each 6 cm in diameter, and transfer them to a baking sheet lined with parchment paper.
Step 5
Brush the cookies with cream on top and sprinkle with fine sugar.
Step 6
Bake for 20–25 minutes until cooked through and golden brown. Let cool.
