Shangi with Potatoes
Ingredients
- Butter 5 oz
- Chocolate eggs 3 pieces
- Salt 1 teaspoon
- Salad Potatoes 6 pieces
- Milk 10 fl oz
- Wheat Flour 25 oz
- Clarified Butter 2 tablespoons
- Granulated sugar 0 oz
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
Prepare the dough starter: pour in 160 ml of milk, add the dissolved and strained yeast, sprinkle in half of the flour, and mix until smooth. Let it sit for 2 hours.
Step 2
Rub half of the butter with sugar, salt, and two eggs, then pour in the remaining milk.
Step 3
Add the mixture to the starter along with the remaining half of the flour. Knead the dough and let it rise for another 2 hours. During the fermentation time, you will need to punch down the dough a couple of times.
Step 4
Boil the potatoes. Make mashed potatoes by mashing the potatoes with half of the butter left from the dough. Optionally, you can add a little milk and salt to taste.
Step 5
Shape the dough into round shangi. Slightly press the center and place the potato puree on top. Brush the edges of the dough with the yolk of one egg.
Step 6
Bake at 355°F until done (approximately 30–40 minutes).
Step 7
Brush the finished shangi with clarified butter.
