Description

We will show you how to make a simple sesame soup. This dish is from Middle Eastern cuisine, as prepared by people in Israel, for example. You will only need to boil rice, blend sesame with olive oil and lemon juice, mix everything together, and add spices. For more authenticity, add za'atar and enjoy the soup with pita on the side.

  • Toasted Sesame 5 oz
  • Olive Oil 5 fl oz
  • Salt to taste
  • Meyer Lemon Juice 0 fl oz
  • Ground Black Pepper to taste
  • Parsley to taste

Place the rice in a pot, add 1.5 liters of water, season with salt, and put it on the heat. Cook until the rice is done, which takes about twenty minutes. There is no need to drain the water.

In a blender, combine olive oil, lemon juice, and sesame seeds until a smooth paste forms.

Remove the pot with rice from the heat and whisk in the paste. Ladle the soup into bowls, and if desired, season with freshly ground black pepper and finely chopped parsley.
