Description
The soup should have a slight tanginess, which depends on the variety of tomatoes used. If you prefer it to be more tangy, you can add vinegar or lemon juice. Enjoy your meal!
Ingredients
- Tomatoes 20 oz
- Carrot 1 piece
- Orange Bell Peppers 5 oz
- Passata Tomato Sauce 5 oz
- Minced garlic 1 clove
- Dried Rosemary a pinch
- Olive Oil 1 tablespoon
- Water 0 qt
- Onion 1 head
- Mild Chili Spice to taste
- Salt to taste
Step-by-Step Guide
Step 1
Peel the onion and chop it into small cubes. Peel the carrot and grate it using a coarse grater. Sauté in a skillet. When to add the finely chopped large clove of garlic.
Step 2
Transfer the undercooked onion, carrot, and garlic from the skillet to the pot. Dice the red bell pepper and add it to the same pot. Begin to simmer.
Step 3
Add the diced tomato and sauté. Then, dilute the tomato paste with water and add a pinch of dried oregano. Continue to cook for another 5 minutes with a bay leaf.
Step 4
Remove the bay leaf. Use a blender to puree the soup until smooth. Season with salt and red pepper to taste. Add finely chopped parsley leaves.
