
Semolina Muffins with Dried Apricots

Description
Before cooking, I soaked the semolina in milk for half an hour to let it swell a bit.
Ingredients
- Semolina ¾ cup
- Milk ¾ cup
- Egg white 1 piece
- Sugar ¼ cup
- Wheat Flour 1⅖ cups
- Vegetable Oil ¼ cup
- Dried Apricots 10 pieces
- Baking Powder 1 tablespoon
- Salt a pinch
- Vanilla salt 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
While the oven is heating, whisk the egg with the sugar. Lightly beat it.
Step 3
Add the semolina soaked in milk, flour, salt, baking powder, vanilla sugar, and oil to the bowl with the egg and sugar. Mix well.
Step 4
Cut the dried apricots into cubes and add them to the batter.
Step 5
Mix everything again and distribute into the muffin tin compartments.
Step 6
Place in the oven and bake for 18–20 minutes.
