Semolina Cake with Oranges
Ingredients
- Semolina 1 cup
- Kefir 1 cup
- Farm fresh eggs 2 pieces
- Sugar 1 cup
- Wheat Flour 1½ cups
- Oranges 2 pieces
- Baking Powder ½ teaspoon
Step-by-Step Guide
Step 1
Pour the semolina with kefir and let it sit until it swells (the time depends on the semolina, from 30 minutes to 1.5 hours).
Step 2
Grate the zest of the oranges, peel them, and separate into segments. I prefer to remove the membrane from each segment and then cut each segment into pieces, but you can leave them whole.
Step 3
Mix the eggs with the sugar in a bowl over a water bath. Add the swollen semolina with kefir to the eggs and mix. Add the zest.
Step 4
Add the sifted flour with baking powder to the batter; the batter should have the consistency of thick sour cream.
Step 5
Line a baking dish with parchment paper, pour in 1/3 of the batter, spread it across the bottom, place the oranges on top, and pour the remaining batter over them. Bake for about 30–40 minutes, checking for doneness.
