Sea Buckthorn Jam
Preserves • Dagestan
Description
Sea buckthorn is one of those rare berries that are not easy to enjoy fresh. Additionally, gathering them is complicated by encounters with thorns, which can spoil the experience. However, if you cook them down and generously add sugar, it turns out just right. Don't be afraid of these proportions: sea buckthorn and sugar in a one-to-one ratio. First, this guarantees preservation. Second, the sweetness is very much needed by this berry; it will temper its acidity, brightness, and wildness, if you will. Making sea buckthorn jam is not difficult at all: you need a heavy-bottomed pot, a little attention, and strict adherence to the recipe.
