Scones with Cheshire Cheese

Ingredients

  • Buttermilk 3 tablespoons
  • Chives 1 tablespoon
  • Self-rising flour 5 oz
  • Cheshire Cheese 5 oz
  • English Dry Mustard ½ teaspoon
  • Salt ½ teaspoon
  • Butter 0 oz
  • Chicken Egg 1 piece
  • Milk 3 tablespoons
  • Cayenne Pepper to taste

Step-by-Step Guide

Step 1

Sift the flour into a bowl, add the mustard, salt, and cayenne pepper. Mix everything together. Rub in the butter until the mixture resembles crumbs. Stir in 75 g of grated Cheshire cheese and the chopped chives.

Step 2

Beat the egg with the buttermilk, add the mixture to the crumbs, and mix with your hands to form a dough.

Step 3

Roll out the dough into a round shape and cut out 6 rounds. Place the rounds on a baking sheet greased with vegetable oil, brush them with milk, and sprinkle with 25 g of grated Cheshire cheese and cayenne pepper.

Step 4

Bake at 430°F for 15-20 minutes until golden brown.

Step 5

Allow the finished scones to cool slightly, then brush with butter.
