Scandinavian bagels with cardamom
Ingredients
- Wheat Flour 3 cups
- Cream 22% 5 fl oz
- Brown Sugar 0.7 cups
- Chocolate eggs 2 pieces
- Butter 0 oz
- Cardamom 12 pieces
- Bran to taste
- Dry yeast 2 tablespoons
- Ocean salt 1 teaspoon
Step-by-Step Guide
Step 1
Toast the cardamom pods in a dry, preheated skillet over medium heat, shaking occasionally, for 1–2 minutes. Then open them, remove the seeds, and grind them in a mortar (finely). You should have about 1.5 teaspoons.
Step 2
Dissolve the yeast with a pinch of sugar in 1/2 cup of warm water, stir, and let it sit until frothy for 5–10 minutes. Melt the butter and let it cool slightly.
Step 3
Sift 2 cups of flour with salt into a large bowl, add bran and cardamom, mix, and create a mound of flour with a well in the center. In another bowl, whisk the eggs with the warm cream. Pour in the yeast mixture and stir. Add the egg-cream mixture and mix. Add the melted butter and mix.
Step 4
Gradually add the remaining flour while kneading. Knead until smooth. Transfer the dough to a floured work surface and knead vigorously until elastic, about 10 minutes. Place the dough in a clean bowl, sprinkle with flour, cover with a towel, and let it rise in a warm place for 2 hours.
Step 5
Once the dough has risen, punch it down, transfer it to a floured work surface, and divide it into 20 equal pieces. Roll each piece into a sausage shape about 8–10 cm long, connect and pinch the ends to form a bagel. Line baking sheets with parchment paper greased with oil. Arrange the bagels about 3–4 cm apart. Cover with slightly damp towels and let rise for 30–40 minutes.
Step 6
Brush the risen bagels with beaten egg mixed with cream and bake in a preheated oven at 355°F until golden brown, about 20 minutes.
