Scandinavian Apple Pie
Ingredients
- Apple 5 pieces
- Lemon Juice 1 tablespoon
- Wheat Flour 5 oz
- Rye Flour 2 tablespoons
- Chicken Egg 2 pieces
- Vanilla Sugar 1 teaspoon
- Ground Almonds ¼ cup
- Sugar 5 oz
- Butter 5 oz
- Baking Powder 2 teaspoons
Step-by-Step Guide
Step 1
Peel the apples and slice them thinly.
Step 2
Line an 18 cm baking dish with parchment paper.
Step 3
Arrange the apple slices tightly against each other.
Step 4
Gently press down on the apple layer with your palm.
Step 5
Sprinkle the apples with lemon juice.
Step 6
In a saucepan, combine the butter and sugar, bring to a boil, stir, remove from heat, and let cool slightly.
Step 7
In a bowl, mix the wheat flour, rye or flax flour, and baking powder.
Step 8
Add the eggs one at a time to the saucepan with the melted butter, mixing well after each addition, then add the flour to the same saucepan and stir.
Step 9
Add vanilla essence or vanilla sugar and mix well.
Step 10
Pour the batter over the apples.
Step 11
Sprinkle with 2 tablespoons of sugar and ground almonds on top.
Step 12
Dot with pieces of butter.
Step 13
Bake in the oven at 365°F for 45–60 minutes. Check for doneness with a wooden stick; the batter should not stick.
Step 14
Once ready, remove and let cool.
