  • Butter 10 oz
  • Farm fresh eggs 8 pieces
  • Sugar 35 oz
  • Wheat Flour 5 oz
  • Corn Starch 5 oz
  • Baking Powder 0 oz
  • Milk 10 fl oz
  • 10% cream 5 fl oz
  • Honey 5 oz
  • Apricot Jam 10 oz

Step-by-Step Guide

Step 1

Prepare the cake batter. Melt the butter (200 g), add chocolate (200 g). Mix the flour (100 g), starch, and baking powder. Whisk the eggs and sugar (200 g) until stable foam forms. Pour the melted butter and chocolate mixture into the whipped eggs with sugar at low speed. Add the mixed flour, baking powder, and starch. Mix until smooth. Pour into a cake pan lined with parchment paper. Bake in the oven for 1 hour at 300°F.

Step 2

Prepare the cream for the cake. Bring the milk to a boil. Add the mixed sugar (125 g) and flour (40 g). Remove from heat and add chocolate (100 g). Add butter (100 g). Add cream (50 g). Mix until homogeneous.

Step 3

Prepare the glaze for the cake. Bring the cream (100 g) to a boil. Add chocolate (150 g). Mix well.

Step 4

Prepare the soaking syrup for the layers. In a saucepan, combine 0.5 liters of water and 750 g of sugar, and reduce by 20%. Remove from heat and add honey to taste.

Step 5

Assemble the cake. Trim the domed top off the cake layer. Cut the layer in half lengthwise. Place one layer in the cake pan and soak it with the syrup. Grate the trimmed top, mix it with the cream, and spread it evenly on the first layer. Place the second layer on top. Soak it with the syrup. Refrigerate for 2 hours. Generously coat the cake with apricot jam (the glaze should not touch the sponge). Pour the chocolate glaze over the top.

Step 6

Refrigerate to set.
