Description

Sacher Torte is a classic chocolate cake originating from Austria, known for its rich flavor and smooth chocolate ganache. Traditionally served with a dollop of whipped cream, it is a favorite dessert at many American cafes and bakeries.

Ingredients

  • Water 10 fl oz
  • Chocolate 10 oz
  • Butter 5 oz
  • Sugar 10 oz
  • Chicken Egg 3 pieces
  • Wheat Flour 5 oz
  • Cocoa Powder 0 oz
  • Almond 0 oz
  • Apricot Jam 5 oz
  • Cream 5 fl oz

Step-by-Step Guide

Step 1

Melt 100 grams of chocolate with water in a small bowl set over a pot of boiling water, then let it cool.

Step 2

Beat the butter and sugar together with an electric mixer, then add the eggs one at a time, continuing to mix. Gradually add the sifted flour, cocoa powder, ground almonds, and melted chocolate.

Step 3

Preheat the oven to 355°F. Grease a 23 cm round cake pan. Line it with parchment paper. Pour the mixture into the prepared pan and bake for about an hour, or until cooked through.

Step 4

While the cake is baking, prepare the icing. Stirring constantly, melt 200 grams of chocolate and cream in a bowl set over a pot of boiling water.

Step 5

Allow the baked sponge cake to sit in the oven for 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, slice it in half and spread jam on one half. Place it back on the rack and coat it with icing. Heat the remaining icing and pour it over the top.
