Sabayone with Sauternes
Ingredients
- Whole egg 8 pieces
- Sugar ½ cup
- Sauternes 0.6 cups
- Cream (40%) 2 cups
- Grapefruits to taste
Step-by-Step Guide
Step 1
In a large bowl, pour in ice water with ice and set aside.
Step 2
In a bowl over a water bath, beat the yolks with sugar using a mixer. Add the Sauternes and continue to beat for another 4 minutes until the mixture thickens slightly. Be careful not to overheat, so the yolks don't curdle — occasionally lift the bowl from the water bath.
Step 3
Lower the bottom of the bowl into the bowl with ice water and continue to beat for another 10 minutes.
Step 4
Meanwhile, whip the cream to stiff peaks. Fold the whipped cream into the egg mixture and beat again.
Step 5
Serve by spooning the cream over fresh fruits or berries.
