
Rye Muffins with Chocolate

Description
Very rich chocolate flavor. They turn out not sweet at all. I find the sweetness from the ingredients sufficient, but if you prefer them sweeter, you can add more honey or use chocolate with a lower cocoa content.
Ingredients
- Coarsely Ground Rye Flour 5 oz
- Wheat Flour 5 oz
- Milk 10 fl oz
- Farm fresh eggs 3 pieces
- Baking Powder 1 teaspoon
- Buckwheat Groats 1 tablespoon
- Salt a pinch
- Cocoa Powder 6 tablespoons
- 70% Dark Chocolate 5 oz
- Olive Oil 3 tablespoons
Step-by-Step Guide
Step 1
Whisk the eggs with salt until frothy, add milk, honey, and oil, and whisk again. Gradually add both types of flour, mixing well, then add baking powder and cocoa. Knead the dough.
Step 2
Chop the chocolate into small cubes. Add part of it to the dough, leaving some for topping. Divide the dough into muffin cups and sprinkle with the remaining chocolate on top.
Step 3
Bake at 390°F for 18 minutes.
