Step-by-Step Guide

Step 1

Combine 250 grams of butter, 250 grams of sugar, and 40 grams of honey in a saucepan and heat until it reaches 175°F.

Step 2

Then remove from heat and add the eggs mixed with the kvass mash. Stir until smooth. Add baking soda, dissolved in lemon juice.

Step 3

In a separate bowl, combine the wheat flour, rye flour, malt, and salt, then add to the main mixture. Knead until uniform.

Step 4

Spread the prepared dough onto a silicone mat. Bake the sheet at 340°F for 6 minutes. Make 4 layers.

Step 5

Prepare the custard: Combine milk, 40 g of honey, and 50 g of sugar in a saucepan, bring to a boil, and then add the egg yolks mixed with cornstarch. Cook until thickened and remove from heat. Allow to cool.

Step 6

Mix the custard, 40g of honey, and sour cream together, then add the mascarpone. Whip the egg whites with 100g of sugar and fold them into the cream. Gently combine.

Step 7

Trim the baked layers on the sides. Grind the trimmed pieces into crumbs. Layer the cakes with cream. Finally, sprinkle the top layer of the honey cake with the crumbs. Leave it in the refrigerator for a couple of hours.

Step 8

Prepare the coriander sauce: Bring the cream to a boil and remove from heat, then add the coriander and let it steep for half an hour. Strain the mixture and incorporate the melted chocolate. The cream and chocolate should be at the same temperature for proper blending.

Step 9

Garnish the plate with coriander sauce, place a piece of cake on it, and serve. You can decorate with fresh berries and decorative chocolate.
