Rustic Risotto

Ingredients

  • Rice 1 cup
  • Frozen green bean pods 5 oz
  • Chinese green beans 5 oz
  • Cauliflower 5 oz
  • Dried Rosemary 1 teaspoon
  • Dried Barberry 1 teaspoon
  • Olive Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Champagne Vinegar ½ teaspoon

Step-by-Step Guide

Step 1

I cook the rice in a multicooker. But you can also just boil it.

Step 2

Divide the cauliflower into florets and boil for 20 minutes.

Step 3

Pour oil into a deep skillet and heat it up. Add the peas and beans without thawing. Sauté for 10 minutes over medium heat.

Step 4

Add the cauliflower, tarragon, oregano, vinegar, pepper, and salt to the skillet. Simmer for 5 minutes.

Step 5

Add the rice and sauté for another 5 minutes.

Step 6

Turn off the heat and let it sit covered for 10–15 minutes.
