Ingredients
- Buckwheat Groats 5 oz
- Coarsely Ground Rye Flour 5 oz
- Wheat Flour 15 oz
- Salt to taste
- Honey 2 tablespoons
- Butter 0 oz
- Dry yeast 0 oz
- Dark Ale 5 fl oz
- Water 5 fl oz
Step-by-Step Guide
Step 1
Combine the flours, yeast, and salt.
Step 2
Dissolve the honey in warm water and mix it with the beer. Add the melted butter and gradually pour it into the flour mixture.
Step 3
Knead a soft dough. Cover with plastic wrap and let it rise for 1 hour.
Step 4
Punch down the dough, divide it into two pieces, and shape each piece into a round loaf.
Step 5
Transfer to a greased baking sheet, cover again, and let it rise for 45 minutes.
Step 6
Preheat the oven to 430°F. Dust the loaves with flour and make cross cuts with a sharp knife.
Step 7
Bake for 10 minutes.
Step 8
Reduce the oven temperature to 390°F and bake the bread for another 30 minutes.
