Step-by-Step Guide
Step 1
Sift the flour and bran. Dissolve the sugar in water. Mix the dough ingredients and knead until smooth for about 5 minutes. Wrap in plastic wrap, flattening it to cool faster, and place in the freezer for 20 minutes.

Meanwhile, prepare the cherry filling. Place a saucepan with cherries, sugar, and starch over medium heat, mixing the ingredients well. Stirring constantly, bring the mixture to a thickening point, remove from heat, and transfer to a room temperature container.
Step 3
Take out the dough, knead it with your hands, but do not fold it; instead, separate it like modeling clay. When the dough warms up, roll it into a disk about 3 mm thick. Use a lid or something round of suitable diameter as a template, and cut out a circle with a knife. Roll out the leftover dough and cut it into strips about 1 cm wide.
Step 4
Place the filling closer to the center, leaving a 3-4 cm border around the edges. Use the prepared strips to create a lattice over the filling, then fold the edges over alternately, making pleats.
Step 5
Preheat the oven to 390°F. Line a baking sheet with parchment paper, greasing it with oil. Carefully transfer the prepared galette to the baking sheet.
Step 6
Bake the pie for 40 minutes. You can check for doneness by the firmness of the dough; it should be like warm cookies, meaning quite firm.
