Rosemary Jelly
Ingredients
- Boiling water 1¼ cups
- Dried Rosemary 2 tablespoons
- Sugar 3 cups
- Vinegar essence ¼ cup
- Yellow pectin 5 fl oz
- Red Food Coloring to taste
Step-by-Step Guide
Step 1
In a saucepan, combine boiling water and chopped rosemary. Cover and let steep for 15 minutes. Strain and add water as needed to make 1.25 cups.
Step 2
Pour the infusion back into the saucepan, add sugar and vinegar, and bring to a boil over high heat, stirring.
Step 3
Add the pectin and cook for another minute, stirring.
Step 4
Remove from heat and skim off any foam.
Step 5
Add a few drops of green food coloring, mix, and pour into molds. Allow to set.
