Roasted Tomato Soup
Ingredients
- Tomatoes 10 oz
- Olive Oil 0 fl oz
- Garlic 2 heads
- Fresh basil leaves 0 oz
- Herbes de Provence to taste
- Chicken Broth 5 fl oz
- Onion 0 oz
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Cut the tomatoes in half (horizontally) and place them on a baking sheet that has been lightly oiled.
Step 2
Generously sprinkle with powdered sugar, herbs, and half a head of garlic.
Step 3
Bake in the oven at 375°F for 20 minutes.
Step 4
Sauté the finely chopped onion, adding Provençal herbs and garlic.
Step 5
Place in a blender and blend together with the tomatoes until you achieve a soup-like consistency.
Step 6
Add chicken broth, salt, and pepper, then strain.
Step 7
Pour the soup into a serving bowl, garnish with basil leaves and a drizzle of olive oil.
