Ingredients
- Olive Oil 1 tablespoon
- Chicken Broth 0 qt
- Onion ½ head
- Rice 1 cup
- Salt to taste
- Dry White Wine 1 cup
- Butter 0 oz
- Saffron a pinch
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Chop the onion and sauté for about 3 minutes until it becomes translucent. Add the rice, season with salt, and blanch for 2 minutes while stirring.
Step 2
Add the wine and saffron, and simmer on low heat until the rice absorbs all the wine.
Step 3
Then gradually add the hot broth, one ladle at a time, waiting for the rice to absorb the previous portion each time.
Step 4
When the rice is cooked, add the butter and cheese, mix well, and garnish with Parmesan petals.
