Ingredients
- Butter 0 oz
- Olive Oil 1 tablespoon
- Homemade Chicken Sausage 2 pieces
- Arborio rice 10 oz
- Pumpkin 5 oz
- Chicken Broth 20 fl oz
- Grated Pecorino Pepato Cheese 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Chopped Sage Leaves ½ tablespoon
Step-by-Step Guide
Step 1
Melt the butter in a pan, mixing it with olive oil.
Step 2
Add finely chopped garlic and onion to the oil and sauté lightly.
Step 3
Add the rice to the pan and cook, stirring frequently, for about 1 minute.
Step 4
Mix in the diced pumpkin and mushrooms.
Step 5
Pour in 1 cup of hot broth.
Step 6
Continue cooking without bringing to a boil until most of the liquid is absorbed by the rice.
Step 7
Add another cup of broth and continue cooking on low heat until all the liquid is absorbed.
Step 8
Mix in the grated Parmesan, seasonings, and parsley, and serve immediately.
