Risotto with Peas and Bacon

Ingredients

  • Butter 0 oz
  • Onion 2 heads
  • Vegetable Oil 0 fl oz
  • Bacon 10 oz
  • Pea shoots 15 oz
  • Rice 10 oz
  • Chicken Broth 25 fl oz
  • Ground Cumin a pinch
  • Grated Pecorino Pepato Cheese to taste

Step-by-Step Guide

Step 1

In a pot, melt the butter with the vegetable oil. Add finely chopped onion and sauté until golden.

Step 2

Add bacon cut into strips, peas, and rice. Sauté for 1 minute, then add 500 ml of broth and a pinch of cumin. Cook until all the liquid evaporates, then add the remaining broth and cook until the rice and peas are soft and all the liquid has evaporated.

Step 3

Before serving, sprinkle with Parmesan and gently shake.
