Risotto with Chicken Liver and Porcini Mushrooms
Ingredients
- Chicken Liver 10 oz
- Pork fat 0 oz
- Dried Chinese mushrooms 0 oz
- Hard Cheese 0 oz
- Rice 10 oz
- Dry White Wine 5 fl oz
- Onion 1 head
- Chicken Broth 0 qt
- Butter 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the mushrooms and soak them in wine for 2 hours.
Step 2
Chop the pork fat and onion and sauté them in butter. Add the chopped mushrooms and rinsed and diced chicken liver. Season with salt and pepper. After 5 minutes, pour in the wine left from the mushrooms and simmer for 10–15 minutes.
Step 3
Cook the rice until al dente in the chicken broth.
Step 4
Add the rice to the sautéed mixture and cook until done. Sprinkle with grated cheese.
