Description
Vatrushka can be prepared in various ways; it is more about the principle of combining a cottage cheese filling with a rich base than a specific form. Riga Vatrushka resembles a cake: the strained cottage cheese mixed with eggs, sour cream, and sugar is spread over a shortcrust pastry base. As a result, the dessert features a contrast of textures and a festive crust—just what is expected from a cake, a casserole, or any type of vatrushka.
Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Chicken Egg 3 pieces
- Whole egg 1 piece
- Sugar 5 oz
- Cinnamon ½ spoons
- Baking Powder ½ spoons
- Cottage cheese 20 oz
- Sour Cream 0 oz
- Vanillin 0 oz
- Raisins 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
Soak the raisins in warm water for 30 minutes, then drain and chop them.
Step 2
Mix 150 g of flour, half a teaspoon of salt, 40 g of sugar, cinnamon, and baking powder.
Step 3
Add the butter and mix until it resembles coarse crumbs.
Step 4
Then add one egg and knead the dough until it forms a cohesive ball. If necessary, add ice water.
Step 5
Spread the dough evenly across the bottom of the baking dish, prick it with a fork, and refrigerate for 40 minutes. Then, bake in an oven preheated to 355°F for 10 minutes.
Step 6
Separate the remaining eggs into whites and yolks. Beat the yolks with sugar and vanilla.
Step 7
Pass the cottage cheese through a sieve, add 15 g of flour, the egg yolks, and sour cream, and mix well.
Step 8
Whip the egg whites until fluffy, then fold them into the cottage cheese. Add the raisins.
Step 9
Spread the cottage cheese mixture over the cake layer, distribute it evenly, and brush with a mixture of egg yolk and a small amount of water.
Step 10
Bake in the oven for 30 minutes at the same temperature. Allow the finished pastry to cool completely before serving.
