Ingredients
- Sugar 1⅒ cups
- Ricotta cheese 30 oz
- Vanilla extract 2 teaspoons
- Citrus Zest Mix 1 teaspoon
- Salt ¼ teaspoon
- Farm fresh eggs 4 pieces
- Vegetable Oil to taste
- Strawberry 10 oz
- Powdered Sugar 1 tablespoon
- Fresh Berries 15 oz
- Raspberry leaves 15 oz
- Fresh Mint to taste
- Meyer Lemon Juice 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a large bowl, mix the ricotta, 1 cup of sugar, lemon zest, vanilla, and salt, and beat with a mixer on medium speed for 2 minutes. Add the eggs one at a time and pour the mixture into a round greased baking pan (about 25 cm in diameter). Bake for about 1 hour, let cool, and transfer to a serving plate. Dust with powdered sugar.
Step 3
In a bowl, combine the sliced strawberries, raspberries, and blueberries. Add 2 tablespoons of sugar and lemon juice. Mix and let sit for 5 minutes. Arrange the berries on the cheesecake and garnish with mint sprigs.
