Ingredients
- Veal Tenderloin 0 lbs
- Veal with Marrow Bone 1 piece
- Beef Shank 1 piece
- Parsnip 2 pieces
- Carrot 2 pieces
- Celery stalk 0 oz
- Onion 1 head
- Dill 1 bunch
- Parsley 1 bunch
- Bay leaf 4 pieces
- Green peppercorns 10 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Place the beef, bones, and smoked shank in a pot and cover with 14 cups of water. Bring to a boil and skim off the foam.
Step 2
Add the peeled parsnip, carrot, celery, onion, dill, parsley, bay leaves, peppercorns, and salt. Bring to a boil, reduce heat to medium, cover, and simmer for 1 to 1.5 hours.
Step 3
Strain the broth. You can use the beef tenderloin and shank for other dishes.
