Rice Soup with Hummus
Ingredients
- Olive Oil 3 tablespoons
- Onion 0 oz
- Garlic 5 cloves
- Chopped Cilantro (Coriander) 1 bunch
- Cumin 1 teaspoon
- Tomato Paste 4 tablespoons
- Ground red pepper 1 teaspoon
- Rice ¾ cup
- Chicken Broth 5 qt
- Hummus 10 oz
- Salt to taste
- Lemon ½ piece
- Croutons 5 oz
Step-by-Step Guide
Step 1
Heat the oil in a pot. Dice the onion and press the garlic.
Step 2
Sauté the onion with the garlic in the oil until golden, add cilantro, cumin, tomato paste, and red pepper, and cook the mixture over medium heat for 4 minutes.
Step 3
Rinse the rice. Pour hot broth into the pot with the spices, add the rice and hummus, bring to a boil, and cook over medium heat for about 20 minutes.
Step 4
Slice the lemon into thin wedges. Serve the soup, adding a slice of lemon and a handful of croutons to each bowl.
