Ingredients
- Vanilla Bean 1 piece
- Round Rice 10 oz
- Coconut Milk 25 fl oz
- Milk 10 fl oz
- Sugar 0 oz
- Salt a pinch
- Coconut flakes 5 oz
- Mango 1 piece
- Canned Mango 1 can
- Honey 1 teaspoon
Step-by-Step Guide
Step 1
Split the vanilla bean, scrape out the seeds, and place everything in a pot. Add the rice, coconut milk, and milk. Bring to a boil and simmer on low heat for about 20 minutes, stirring frequently. At the end, add sugar and salt, and stir well.
Step 2
Dice the mango. Blend the canned mango with its juice and honey, then mix with the fresh mango pieces.
Step 3
Serve the coconut rice topped with the mango sauce. Toast the coconut flakes in a pan and sprinkle on top.
