In a deep skillet, combine coconut milk, coconut, sugar, salt, and the vanilla bean with seeds and bring to a boil, cooking while stirring frequently until the liquid partially evaporates, about 5 minutes.
Step 2
Add the rice and cook, stirring, until the rice is tender and the syrup thickens, about 5 minutes. Remove from heat, add lime juice; serve hot.
