Rhubarb and Strawberry Sauce

A great sauce for ice cream and pancakes.
Ingredients
- Granulated sugar 0.6 cups
- Orange juice concentrate ½ cup
- Corn Starch 5 teaspoons
- Vanilla extract 1½ teaspoons
- Strawberry 20 oz
- Rhubarb 5 oz
- Red Food Coloring to taste
Step-by-Step Guide
Step 1
In a saucepan, combine sugar, orange juice, cornstarch, and vanilla. Bring to a boil over medium heat. Add chopped strawberries and diced rhubarb. Reduce heat and simmer, stirring, until soft, about 5–10 minutes.
Step 2
Remove from heat and mash with a fork or potato masher. Optionally, add a few drops of red food coloring.
