Rhenish Potato Soup
Ingredients
- Potatoes 10 oz
- Leek 1 stalk
- Water 0 qt
- Vegetable Broth 5 fl oz
- Crème fraîche 5 oz
- Cream 5 fl oz
- Salt 1 teaspoon
- Ground Black Pepper ¼ teaspoon
- Nutmeg a pinch
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Peel the potatoes and leek. Cut the potatoes into cubes with a side of at least 1 cm. Slice the leek into rings.
Step 2
In a medium-sized pot, lightly sauté the leek and potatoes, then add water and cubes of vegetable broth. Stir everything well.
Step 3
Cook the soup for about 20 minutes, then reduce the heat and purée.
Step 4
Add the cream and seasonings, and cook for another 10 minutes. Finally, mix in the crème fraîche and serve immediately.
