Reteš with Cottage Cheese
Ingredients
- Wheat Flour 10 oz
- Chocolate eggs 3 pieces
- Butter 5 oz
- Cottage cheese 10 oz
- Raisins 5 oz
- Sugar to taste
- Vinegar essence 0 fl oz
- Cake crumbs 0 oz
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Separate the eggs into yolks and whites.
Step 2
Pour 25 g of butter into the flour, add the yolks, 2–3 drops of vinegar, and a little water (add water 1 tablespoon at a time while kneading; I needed about 5 tablespoons). Knead an elastic, non-sticky dough, roll it into a ball, and brush with a thin layer of butter.
Step 3
Heat an empty pot of suitable size over the fire and cover the dough. Leave it for 25 minutes.
Step 4
Form an elongated log from the dough and roll it out from the center to the edges until transparent (ideally, it should be thinner than in my photo; it should resemble phyllo dough).
Step 5
Leave the dough for a few minutes to dry (make sure it doesn't dry out too much and become brittle).
Step 6
For the filling, mix the cottage cheese with sugar and raisins. Whip the egg whites into a fluffy foam and gently fold them into the cottage cheese mixture.
Step 7
Generously drizzle the remaining butter over the dough, sprinkle with breadcrumbs, add the filling, and roll it up.
Step 8
Transfer to a greased baking sheet and bake in a preheated oven at 355°F for 40–45 minutes.
Step 9
Cool the finished reteš, cut it diagonally, and sprinkle with powdered sugar.
