Description
Red bell peppers, tomatoes, and cucumbers in a rich chicken broth. The soup will need olive oil; let it be fragrant extra virgin oil.
Ingredients
- Orange Bell Peppers 3 pieces
- Tomatoes 3 pieces
- Carrot 3 pieces
- Olive Oil 3 spoons
- Chicken Broth 2 glasses
- Onion 1 head
- Garlic 2 cloves
- Red Wine Vinegar 2 spoons
Step-by-Step Guide
Step 1
Finely chop the carrots, red bell peppers, and tomatoes, place them in a pot, and cover with broth. Bring to a boil, reduce the heat, cover with a lid, and simmer until the carrots are tender.
Step 2
Heat a skillet and add olive oil. Sauté the finely chopped onion and minced garlic until golden brown.
Step 3
Place everything in a blender and blend until smooth. Chill and add vinegar.
