Red Pepper and Chili Soup
Ingredients
- Olive Oil 2 tablespoons
- Onion 1 head
- Garlic 2 cloves
- Mild Chili Spice 1 piece
- Red Long Chili Peppers 4 pieces
- Tomatoes 3 pieces
- Chicken Broth 30 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Sour Cream 0 oz
- Scallions 0 oz
Step-by-Step Guide
Step 1
Heat the oil in a large pot and sauté the chopped onion, minced garlic, and chili for 5 minutes.
Step 2
Remove the seeds from the peppers, chop them, add to the onion, and sauté for 2 minutes.
Step 3
Peel the tomatoes, add them to the sautéed mixture, pour in the broth, and bring to a boil.
Step 4
Cover with a lid and cook for 20 minutes.
Step 5
Remove from heat, let cool, and blend in a blender.
Step 6
Add sour cream and chopped green onion to the soup.
Step 7
Serve with bread.
