Red Currant Jelly
Ingredients
- Red Currant 5 lbs
- Water 1 cup
- Sugar 7 cups
- Yellow pectin 5 fl oz
Step-by-Step Guide
Step 1
Place the berries in a saucepan and crush them with a masher. Add water and put it on the heat. Bring to a boil, reduce the heat, and simmer for 10 minutes. Strain through cheesecloth, squeezing out all the juice to obtain 5 cups of juice.
Step 2
Pour the juice back into the saucepan, add sugar, and bring to a boil, stirring, over high heat.
Step 3
Then add the pectin and cook, stirring, for another 1 minute.
Step 4
Remove from heat and skim off the foam.
Step 5
Pour into sterilized jars, seal tightly, and cool.
