
Red Currant and Poppy Seed Pie

Description
If using frozen currants, thaw the berries beforehand and drain the juice. You will need 2 tablespoons of flour to coat the berries, in addition to 300 g of flour for the dough!
Ingredients
- Sugar 5 oz
- Vanilla salt 0 oz
- Farm fresh eggs 4 pieces
- Poppy seed paste 3 tablespoons
- Wheat Flour 10 oz
- Baking Powder 0 oz
- Red Currant 5 oz
- Butter 5 oz
Step-by-Step Guide
Step 1
Beat the eggs with sugar until fluffy.
Step 2
Mix the flour with baking powder and add to the egg mixture, alternating with melted butter.
Step 3
Add the poppy seeds and mix well.
Step 4
Coat the red currants with 2 tablespoons of flour, add to the dough, and gently mix.
Step 5
Pour the dough into a greased mold about 30 cm long. Bake at 355°F for about 1 hour until a skewer comes out clean.
Step 6
Let the pie cool. You can drizzle the pie with a glaze made from powdered sugar and water with lemon juice, or simply dust it with powdered sugar.
