  • Raw Cashews 1½ cups
  • Lemon Juice 5 fl oz
  • Vanilla Bean 1 piece
  • Coconut Oil 0 fl oz
  • Honey 0 oz
  • Raspberries 5 oz
  • Almonds 0 oz
  • Dates 6 pieces
  • Sea Salt ¼ teaspoon

Step-by-Step Guide

Step 1

Prepare all ingredients.

Step 2

Soak cashews in water for at least 5 hours.

Step 3

Line the baking dish with parchment paper or plastic wrap.

Step 4

In a food processor, blend dates, almonds, and salt until the mixture is homogeneous and sticky enough to form a small ball when rolled in your hands.

Step 5

Press the nut-date mixture into the bottom of the dish, smoothing the surface.

Step 6

In a food processor, blend cashews, lemon juice, vanilla, coconut oil, and honey until completely smooth.

Step 7

Pour about two-thirds of the mixture into the dish.

Step 8

Add raspberries to the remaining mixture and blend thoroughly again.

Step 9

Pour this mixture over the first layer and place the dessert in the refrigerator or freezer until fully set.

Step 10

Remove the pie from the refrigerator 30 minutes before serving and cut with a knife warmed under hot water.

Step 11

The recipe is designed for a 7-inch (18 cm) diameter dish.
