Raspberry Pastries
Ingredients
- Sugar 5 oz
- Farm fresh eggs 8 pieces
- Wheat Flour 5 oz
- Orange juice concentrate 5 tablespoons
- Red Grape Juice 3 tablespoons
- Raspberry gin 5 oz
- Powdered Sugar 5 oz
- Raspberry leaves 24 pieces
Step-by-Step Guide
Step 1
Separate the egg whites from the yolks. Whip the egg whites with a pinch of salt until fluffy. Mix the yolks with sugar in a mixer, then gently fold in the flour and mix. Carefully add the whipped egg whites and combine.
Step 2
Spread the batter onto a baking sheet and bake in an oven preheated to 200°C (392°F) for 15 minutes. Allow the finished sponge to cool, then cut it in half, spreading raspberry jam mixed with orange juice on each half.
Step 3
Join the sponge halves together with the jam sides facing each other, and cut into 24 squares. Mix grape juice with powdered sugar to create a glaze and drizzle it over each piece. Garnish with fresh raspberries.
