
Raspberry Panna Cotta

Ingredients
- Cream 10 fl oz
- Milk 5 fl oz
- Raspberry Puree 0 oz
- Sugar 0 oz
- Gelatin 0 oz
- Water 0 fl oz
Step-by-Step Guide
Step 1
Soak the gelatin in cold water.
Step 2
In a saucepan, pour in the cream and add the sugar. Place over low heat.
Step 3
As soon as the sugar dissolves, add the milk.
Step 4
Gradually incorporate the raspberry puree.
Step 5
Bring to a boil, but do not let it boil.
Step 6
Strain to remove the seeds. This can also be done right away and add seedless puree to the milk.
Step 7
Add the gelatin to the slightly cooled cream. If the cream has cooled too much, it needs to be warmed up; otherwise, the gelatin will not dissolve.
Step 8
Mix well to dissolve the gelatin, but do not whip. Otherwise, the panna cotta will have bubbles.
Step 9
Pour into molds.
Step 10
Once cooled, refrigerate for 4 hours until fully set.
