Raspberry Marble Brownies

Ingredients

  • Wheat Flour 0 oz
  • 70% Dark Chocolate 5 oz
  • Butter 5 oz
  • Sugar 10 oz
  • Vanilla salt 0 oz
  • Egg white 2 pieces
  • Salt a pinch
  • Egg white 1 piece
  • Baking Powder ½ teaspoon
  • Semi-soft cream cheese 10 oz
  • Whole egg 1 piece
  • Raspberry leaves 5 oz

Step-by-Step Guide

Step 1

Prepare the cheese layer. For this, vigorously mix the cream cheese, 60 g of sugar from the total amount, and the egg yolk. Set aside.

Step 2

Break the chocolate into pieces and cut the butter into cubes. Place them in a bowl over a pot of boiling water and melt (double boiler).

Step 3

Add regular and vanilla sugar, mix, and set aside to cool slightly, about 10 minutes. Meanwhile, sift the flour with salt and baking powder.

Step 4

In the slightly cooled chocolate mixture, add the eggs and egg white, and mix with a whisk.

Step 5

Gradually incorporate the flour mixture and knead the dough.

Step 6

Grease a rectangular or square baking pan with vegetable oil and line it with parchment paper. Spread half of the chocolate batter in the pan. Top with the cheese mixture.

Step 7

Cover with the remaining chocolate batter, take a wooden skewer, and swirl it through the batter in random directions to create a marbled effect. Place the raspberries on top and gently press them into the batter.

Step 8

Place the pan in a preheated oven at 320°F (320 degrees Fahrenheit) and bake for about 50–60 minutes. The edges of the baked brownie should be set, while the center should feel firm but not hard. If tested with a toothpick, it should come out with a few moist crumbs attached.

Step 9

Cool the brownie, remove the parchment, and cut it into small pieces.

Step 10

Garnish with raspberries and mint leaves.
