Raspberry Cupcakes
Ingredients
- Butter 10 oz
- Wheat Flour 5 oz
- Baking Powder 1 teaspoon
- Salt ½ teaspoon
- Farm fresh eggs 2 pieces
- Milk 0 fl oz
- Sugar 5 oz
- Mascarpone Cheese Unagrande 5 oz
- Powdered Sugar to taste
- 10% cream to taste
- Fresh Berries to taste
Step-by-Step Guide
Step 1
Beat the sugar with 115 g of butter.
Step 2
Add the eggs and beat again.
Step 3
Sift the flour and add it to the dry ingredients.
Step 4
Add 1/3 of the mixture to the batter and beat.
Step 5
Then add half of the milk and beat again.
Step 6
Next, alternate adding flour and milk, mixing well each time.
Step 7
Fill the cupcake liners halfway with the batter.
Step 8
Place a berry in each portion, in my case I used raspberries, and bake in a preheated oven at 355°F for 25 minutes.
Step 9
Let cool.
Step 10
For the frosting, beat 110 g of butter, add the mascarpone, and beat again.
Step 11
Add the powdered sugar and a bit of heavy cream — the frosting should not become liquid!
Step 12
Beat the mixture well and add a drop of food coloring, if desired.
Step 13
Decorate the cupcakes with the cream.
