
Ramson Cream Soup

Description
Serve with croutons and rye bread toasts. You can use any other broth instead of vegetable broth.
Ingredients
- Ramsons 1 bunch
- Onion 1 head
- Butter 0 oz
- Wheat Flour 0 oz
- Chicken Broth 25 fl oz
- Salt to taste
- Cream 10 fl oz
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
In a saucepan, melt the butter, then add finely chopped onion and sauté until light yellow.
Step 2
Add the flour and mix well.
Step 3
Slowly pour in the broth, stirring, half of the cream, and add the finely chopped ramson greens (about 5 tablespoons). Bring to a boil and cook for 10 minutes.
Step 4
Transfer the soup to a blender and blend slightly, without making it completely smooth. Season with salt and pepper to taste. Warm it slightly, remove from heat, and add the remaining cream.
