Ingredients

  • Wheat Flour 15 oz
  • Baking Powder ½ teaspoon
  • Salt a pinch
  • Butter 5 oz
  • Milk 10 fl oz
  • Sugar 5 oz
  • Egg white 1 piece
  • Raisins 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Line the bottom of a baking tray with non-stick parchment paper.

Step 2

Sift the flour, baking powder, and salt into a bowl. Rub in the softened unsalted butter until the mixture resembles crumbs. Add the sugar and raisins.

Step 3

Mix the milk and egg, then slowly pour two-thirds into the flour, stirring constantly with a kitchen knife until the mixture resembles dough. It should be quite firm but moist. If the dough is too dry, add more milk and egg.

Step 4

Place the dough on a floured surface and knead for another minute or two to shape it into a round form. Continue rolling until you have a log about 2 cm wide. Cut into 12 flatbreads about 6.5 cm wide. Dust the knife with flour before each cut.

Step 5

Place the flatbreads on a baking sheet, lightly brush them with the remaining egg and milk mixture. Bake in the center of the oven for 10–15 minutes until they rise and turn golden. Serve immediately, preferably warm.
